
Baked Corvina with Potatoes: A Healthy and Delicious Recipe
Eating healthily and affordably can be straightforward and flavorful. We propose achieving this with this fish dish, a nutritious option that provides proteins, iron, and vitamins while containing fewer calories than meat.
Ingredients for 2 servings:
- 500g whole cleaned Corvina
- 2 potatoes, peeled and thinly sliced
- 10 pearl onions
- 1 garlic clove
- Juice of 1 lemon
- 1 small bell pepper
- Salt to taste
- Extra virgin olive oil
Instructions:
- Heat a generous amount of oil in a pan and lightly fry the potato slices without allowing them to brown completely. Remove them and place on a plate lined with paper towels.
- Reduce the heat to low and cook the pearl onions for about 15 minutes, almost confit-style. Drain them and set aside.
- Preheat the oven to 180ºC, using both top and bottom heat without the fan function.
- In an ovenproof dish, arrange the potatoes and pearl onions as a base, and place the cleaned and salted Corvina on top. Drizzle with a bit of olive oil and bake for approximately 15-20 minutes, or until fully cooked.
- In a separate pan, brown the sliced garlic along with the bell pepper. Remove from heat and add the lemon juice.
- As soon as you remove the Corvina from the oven, pour the garlic, pepper, and lemon mixture over it, and serve immediately to enjoy it at its best.
